1 cup cold pineapple juice
4 tbsp powdered gelatin
1 package frozen strawberries
2 cups homemade yogurt or coconut milk
½ cup honey
Sprinkle gelatin on top of cold pineapple juice. Let sit for at least a minute. Heat up frozen strawberries until bubbly. Add gelatin and pineapple juice to the hot strawberries. Stir until gelatin is dissolved.
Blend yogurt or coconut milk, honey, and strawberry/gelatin/pineapple juice mixture in blender. Pour into 2 baked pie crusts. Refrigerate. Enjoy!
Note: Replace package of frozen strawberries with package of frozen blueberries to turn this recipe into Purple Pie!
