Caulifried Rice

1/4 cup lard or butter
1 onion, chopped
3 gloves garlic, minced
1 cup bone broth
1 teaspoon sea salt
1/2 teaspoon black pepper
2 cups frozen (or fresh) peas and diced carrots
2 bags of frozen cauliflower, thawed, or 2 heads fresh cauliflower
1/4 cup sesame oil

Sauté onion and garlic in lard or butter. Add broth, salt, pepper, carrots, and peas. Briefly chop cauliflower in a food processor until size of rice and add to broth mixture. Simmer for 5-10 minutes. Remove from heat and mix in 1/4 cup sesame oil. Enjoy!

Probiotic Salsa

4 tomatoes
1 onion
1-2 Serrano peppers
1/2 teaspoon sea salt
1-2 cloves of garlic or ½ teaspoon garlic powder
1/2 teaspoon lemon juice
clump of fresh cilantro or 1/2 teaspoon dried cilantro (optional)

Chop and blend all ingredients in food processor. Pour into 1 quart jar. Press down lightly on mixture. Add water, if needed, to cover veggies. Veggies should be at least 1 inch below top of jar. Cover tightly and keep at room temperature for 2 days before storing in refrigerator. Enjoy!

Mu Shu Chicken

¼ cup lard
2 onions
1 head of cabbage, finely chopped
3 carrots, peeled and shredded
3-4 cups diced cooked chicken
1 cup bone broth
1 tbsp lemon juice
1 tbsp ginger powder
2 tbsp raw honey
1 ½ tsp sea salt
1 tsp black pepper
½ tsp garlic powder

Sautee onions in lard. Add the remaining ingredients and simmer until done. Serve with tortillas and plum sauce. Enjoy!
