Chicken and Cauliflower Rice Casserole

1/4 cup lard or butter
1 onion, chopped
3 cloves garlic, minced
1 cup bone broth
1 bag of frozen broccoli florets or 3 cups fresh chopped broccoli
1 large box of mushrooms
1 teaspoon sea salt
1/2 teaspoon black pepper
2 bags of frozen cauliflower, thawed, or 2 heads of fresh cauliflower
3 cups cooked cubed chicken
2 cups homemade yogurt
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery powder
2-3 cups cheese

Sauté onion and garlic in lard or butter. Add broth, broccoli, mushrooms, salt, and pepper. Briefly pulse cauliflower in a food processor until size of rice. Stir in cauliflower. Simmer until cauliflower is done. Spoon into 9 x 13 inch pan. Layer chicken on top of cauliflower rice mixture. Spread mixture of yogurt, salt, garlic powder, onion powder, and celery powder over chicken. Sprinkle with cheese. Bake at 350 degrees Fahrenheit until bubbly. Enjoy!

Blueberry Pancakes

6 cups almond flour
12 eggs
1 cup homemade yogurt
1 cup lard
1/3 cup raw honey
1 tablespoon vanilla
1 teaspoon sea salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups fresh or frozen blueberries

Mix first nine ingredients. Stir in blueberries. Cook on indoor grill. Top with butter and fruit. Use pear or blueberry juice as syrup. Enjoy!

Vanilla Chocolate Chip Ice Cream

1 batch of vanilla ice cream
1/2 pan of semi-sweet chocolate chips

Blend ingredients for vanilla ice cream. Freeze for about an hour before putting in ice cream maker. When ice cream is starting to take shape, add frozen semi-sweet chocolate chips. Continue to freeze in ice cream maker until desired consistency. Enjoy!

Cherry Chocolate Chip Ice Cream

2 cups coconut milk or kefir
1 cup homemade sour cream, homemade yogurt, or water
1 cup pitted cherries
½ cup raw honey
2 teaspoons vanilla
2 teaspoons almond flavor
1 cup pitted cherries, halved or chopped
1/2 pan of semi-sweet chocolate chips

Blend first six ingredients. Freeze for about an hour before putting mixture in ice cream maker. Churn in ice cream maker. When ice cream is starting to take shape, add cherries and frozen semi-sweet chocolate chips. Continue to freeze in ice cream maker until desired consistency. Enjoy!

-Any combination of coconut milk, kefir, sour cream, yogurt and water works.

Blue Cheese Chicken Divine

1 butternut squash, peeled and cubed
2 tablespoons lard or butter, melted
½ teaspoon sea salt
¼ teaspoon pepper
¼ cup lard or butter
1 onion, chopped
1 cup bone broth
2 tablespoons lemon juice (juice of 1 lemon)
1 teaspoon rosemary
½ teaspoon sea salt
¼ teaspoon pepper
1 cup Parmesan or other white cheese, grated
½ cup blue cheese, crumbled
½ cup homemade sour cream or cream cheese (drained homemade yogurt)
1 bag fresh baby spinach
2-3 cups cooked chicken, cubed

Coat butternut squash with lard or butter, sea salt, and pepper. Bake in oven at 450 degrees Fahrenheit for about 15-20 minutes until slightly crispy.  On stovetop, sauté onions in lard or butter until onions are clear. Add broth, lemon juice, spices, cheeses, cream, and spinach. Simmer until spinach looks wilted. Add chicken and baked butternut squash cubes. Serve over spaghetti squash noodles, caulifried rice, or plain cauliflower rice. Enjoy!

Pineapple Upside-Down Cake

10-12 pineapple rings
cherries or berries (optional)
2/3 cup raw honey
2/3 cup coconut oil
4 eggs
1/2 cup homemade yogurt
¼ cup pineapple juice
1 tablespoon almond flavoring
4 cups almond flour
1/2 teaspoon sea salt
1 teaspoon baking soda

Place pineapple rings in greased 9 x 13 inch pan. Place cherries or berries in the middle of each pineapple ring (optional). In food processor or mixer, combine honey and coconut oil. Mix eggs, one at a time, into honey and coconut oil mixture. Add yogurt, pineapple juice, and almond flavoring and mix well. Add almond flour, salt, and baking soda and combine thoroughly. Pour batter into pan with fruit. Bake at 350 degrees Fahrenheit for about 45 minutes. Cool and flip onto platter. Enjoy!

Lemon Pie

1/2 cup coconut oil in liquid form
1/2 cup lemon juice
1/2 cup homemade cream cheese (drained yogurt)
3/4 cup raw honey
6 eggs

Blend all ingredients. Pour into one unbaked pie crust. Bake at 350 degrees Fahrenheit for 45 minutes. Enjoy!

-Use lemon juice from juicer for maximum flavor.

Green Eggs No Ham

10 eggs
1 tsp sea salt
1/4 tsp black pepper
1/2 cup homemade yogurt
1 bag frozen chopped broccoli
2 cups cheese

Mix first five ingredients, pour into greased 9×13 inch pan, sprinkle with cheese, and bake for about 50 minutes at 375 degrees. Enjoy!

Note: Recipe can be transformed into Green Eggs and Ham if you can find GAPS friendly salt cured ham. Sugar cured ham is not GAPS legal.
