Nacho Cheese Crackers

5 cups almond flour
3 cups shredded cheese
1 tsp sea salt
1 tsp cumin
1 tsp cayenne
1/3 cup water

Mix all ingredients. Roll thinly onto two 9 x 13 inch cookie sheets. Bake at 350 degrees Fahrenheit for 7 minutes. Cut and flip pieces. Return to oven and bake for another 7 minutes. Cool. Enjoy!

Spanish Cauliflower Rice

1/4 cup lard or butter
1 onion, chopped
3 gloves garlic, minced
1 cup bone broth
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1 tomato, chopped
1 pepper of choice (Serrano, jalapen᷉o, bell, etc.), chopped
2 heads of fresh cauliflower or 2 bags of frozen cauliflower, thawed

Sauté onion and garlic in lard or butter. Add broth, salt, pepper, cumin, cayenne pepper, tomato, and pepper. Briefly chop cauliflower in a food processor until size of rice. Stir in cauliflower. Simmer until liquid is gone and cauliflower is done. Enjoy!

Butternut Squash Fire Fries

1 butternut squash
¼ cup melted lard or butter
About 1 tsp sea salt
About 1 tsp garlic powder
About 1/2 tsp cayenne pepper

Peel, wash, remove seeds, and slice butternut squash into thin strips. Coat cut squash with lard or butter. Spread out coated squash on cookie sheet. Sprinkle with salt, garlic powder, and cayenne pepper. Bake at 450 degrees Fahrenheit for 40-45 minutes. Let cool somewhat, then toast for another 5 minutes until crispy. Enjoy!
