Strawberry Jam

OLYMPUS DIGITAL CAMERA

48 ounces or 6 cups fresh or frozen strawberries
1 cup raw honey
1 tablespoon vanilla
1 apple, peeled, cored and grated
2 tablespoons lemon juice (1 lemon)

Combine all ingredients in a saucepan. Heat to boil and then simmer for about 60 minutes, stirring occasionally. Skim pinkish froth from top and discard, if desired. Store in refrigerator. Enjoy!
