Ratatouille

1 onion, chopped
1 large eggplant, peeled and chopped
2 small zucchinis, peeled and chopped
2 medium tomatoes
1 cup tomato juice
1 cup bone broth
several cloves crushed garlic
1 teaspoon sea salt
1 teaspoon basil
1 teaspoon marjoram
1 teaspoon oregano
1 teaspoon parsley
½ teaspoon black pepper
2 pounds cooked ground beef or turkey
cheese

Sauté onions in a healthy amount of lard or butter. Add eggplant, zucchini, tomatoes, tomato juice, broth, and seasonings. Simmer until veggies are soft. Layer veggie mixture, ground meat, and cheese twice. Put in oven to melt cheese. Enjoy!
